Method

  1. Peel and wash the vegetables. Channel the carrots with a special channelling knife (optional). Cut all the vegetables into paper-thin slices, and put them into the saucepan.
  2. Add the water, salt, lemon peel, garlic, green peppercorns, clove and bouquet garni. Bring to the boil and simmer very gently, uncovered, for 30 minutes. The vegetables should be still slightl
