  • 4 baby carrots
  • 4 baby turnips with their green stalks
  • 4 medium-size new onions


Preparing the vegetables

  1. Cut most of the green leaves off the carrots and turnips with a small knife, leaving 2 cm (¾ inch) of ‘topknot’ formed by the base of the stalks. Leave 3 cm (1¼ inches) of green shoot on the onions. Peel the carrots and turnips with a potato-peeler. Cut the roots off the onions and remove their outer skins. W
