Main ingredients

  • 500 g (18 oz) whipping cream, chilled
  • 50 g (1¾<


  1. Take the chilled cream and the salad-bowl out of the refrigerator. Put the cream in the bowl and add the sugar and the vanilla sugar.
  2. Beat these ingredients for 2 minutes, using a supple movement of the wrist. Little by little the cream will ‘mount’ into an airy cloud, doubling in volume.
  3. Then, beat rather faster for 30-40 sec
