Preparing the Coffee Crystals

Bring the 200 ml (⅓ pint) water and 30 g (1 oz) sugar to the boil in the saucepan. Remove from the heat and whisk in the instant coffee thoroughly. Transfer the mixture to the freezing tray of the refrigerator and put it in the freezing compartment or freezer, stir
