Method

  1. Bring the milk to the boil in the medium-sized saucepan, add the honey, whisking well with a small wire whisk, and bring back to the boil.
  2. Meanwhile, put the two egg yolks into a bowl, whisk them for one minute, then add the cream, still whisking until well mixed.
  3. Add the boiling milk-and-honey mixture and whisk vigorously.
