  • 145 g (5 oz) plain eating chocolate
  • 7 egg yolks

Method

  1. Let the chocolate melt in a small saucepan in the bain-marie or in a lowish oven (170°C/335°F/Mark 3).
  2. Beat the egg yolks and sugar in a bowl for about 2 minutes until the mixture becomes light and pale.
  3. Add the melted chocolate, gently folding it in with the wooden spatula, turning and blending the mixture well.
