This recipe is particularly special to me, as it comes from my father-in-law, who was quite unwell when we were working on the book but was determined to help preserve the recipe for future generations. His family was Polish Ashkenazi Jewish, and his real name was Eduard Balthasarovich Kalenskyy, which he had to change during Soviet times into a Russified version—Eduart Borisovich—to hide his Polish and Jewish roots.
