Mykola and I have collaborated on many projects over the years. An incredible baker, he has a rare talent for teaching his craft. His passion for sourdough and baking is infectious. He teaches the technicality, but more importantly, he conveys why sourdough baking is worth the effort: the reasons are nutritional, social, and even spiritual.
