Method

Buy very fresh squid with unbroken ink sacs, so that as much ink as possible can be collected. About 1kg (2¼ lb) squid should provide enough ink to reduce, by simmering, to the required quantity of 40ml (8 tsp). If necessary, make the amount up with a little warm water. (Use the squid meat in Squid Salad.)
