Granité, gremolata or granita is nearest to the original sorbet - hardly sweetened, and with fairly large ice crystals. The thickness of the sorbet, and size of the ice crystals, depends on the amount of sugar or sweetening used, and on how much it is stirred during freezing.

  • 30 ml (2 tbsp) coffee beans, darkly roasted

  • Coarsely grind the coffee beans or crush them in a mortar.
  • Put the coffee into a pan and pour on the boiling water.
  • Cover and put the pan in a warm bain-marie for 15 minutes to allow the coffee to brew.
  • Strain the coffee and immediately add the honey. Stir until the honey dissolves.
