Butterfly cakes were a children’s party treat long before cupcakes became fashionable. The method of scooping a disc out of the top of the cupcake and cutting it in two to form butterfly wings can be used with any sort of cupcake and some people use jam to hold the wings together but we like lemon buttercream. We have cut the extra wings out of ready-to-roll fondant icing, but you can also easily find pretty wafer or ready-made sugarpaste butterflies.
