Ingredients: candles; 2.5 ml/½ tsp lemon juice (optional); 2.5 ml/½ tsp glycerine; ½ egg white (about 17 g/½ oz/generous 1 tbsp); 115 g/4 oz/generous ½ cup caster (superfine) sugar; 5 ml/1 tsp vanilla extract; 115 g/4 oz/½ cup butter; 15-30 ml/1-2 tbsp milk; 115 g/4 oz/1 cup icing (confectioners’) sugar; 2 eggs, lightly beaten; 115 g/4 oz/1 cup self-raising (self-rising) flour, sifted; gel or paste food colouring, green, blue, yellow; brightly coloured sugar sprinkles; 5-7.5 ml/1-1½ tsp water

Bright colours, candles and flags are just the thing for a birthday. We particularly like spotted candles, but you can find them in a huge variety of shapes from numbers and letters to dinosaurs and butterflies. Top as many cakes as the child’s age with candles. You can use flags or make your own cake toppers with pairs of a favourite picture printed out and glued round a cocktail stick (toothpick) for the remaining cakes.
