Sometimes only a cupcake will do for a celebration. Italian meringue frosting coloured very pale blue sparkles with stars, sprinkles and candles. The frosting is easy to make and produces a shiny, fluffy topping. Sugar syrup is beaten into egg whites and, if you prefer, this recipe can be made using reconstituted pasteurized dried egg white powder or pasteurized carton egg whites Alternatively you could use buttercream. This frosting is best eaten on the day it is made.
