Desert Island Cupcakes

These moist pineapple-, banana- and orange-flavoured cupcakes are a variation of the American classic ‘hummingbird’ cake and make a deliriously tropical base for desert island cupcakes. We have had fun with islands and sharks — you could also make boats with flag sails. Little paper parasols, sold to decorate cocktail drinks, are usually quite easy to find.
