Little French macarons on lollipop sticks or nestled in petit four cases make wonderful child-sized treats in bright colours. They are not difficult to make as long as you measure the ingredients and follow the instructions carefully. If you want to make more than one colour, it is better to make two separate batches of mixture.

  1. Line two baking sheets with baking parchment.
  2. Put the ground almonds and the icing sugar in a food processor and process for 2-3 minutes until the mixture is very fine. Do not over-process. Sift the sugar and almond mixture into a bowl and set aside. Discard any bits of almond left in the sieve (strainer) — do not force them through.
