Marshmallow Mint Chocolate Whoopie Pies

Mint chocolate chip ice cream is a favourite with many children, so we have devised a chocolate whoopie pie filled with fluffy mint filling made with an amazing ingredient called marshmallow fluff. This fluffy white substance comes in jars and is used in the traditional whoopie pie filling. It is really delicious, and this mint variation is especially good. It is becoming more widely available in supermarkets.
