Everyone loves strawberries in the summer and each of these cupcakes has a strawberry jam surprise at the centre and a topping of lightly sweetened whipped cream and fresh strawberries. You could easily adapt the recipe to use with raspberries or other soft fruit. It is best to add the topping just before serving.
