The chill of a lime-drenched salad is a permanent feature on Indian tables, especially during the scorching heat of an Indian summer. A crisp contrast to robust curries, this salad also makes a fabulous relish for meaty kebabs and grills.

Ingredients

  • ½ cucumber, diced
  • 3 tomatoes, seeded and diced
  • 4 spring onions (scallions), finely sliced

Method

  1. Combine the cucumber, tomatoes, spring onions (scallions), and apple in a bowl.
  2. To make the dressing, whisk together the lime juice, cumin powder, red chilli, and ground pepper. Pour the dressing over the salad, mix well until combined and serve sprinkled with fresh coriander (cilantro).
