In India, spices are pulverised on a grinding stone — all that bashing and bruising brings out an intensity of flavour. A mortar and pestle does pretty much the same job: try using it for pounding the poppy and fennel seeds for this aromatic curry — you’ll never want to buy ready-ground spices again.

  • 7 cm ( in) fresh root ginger, peeled
  • 2 red chillies, seeded and cut into thin strips
