The original recipe, handwritten in a well-used notebook, has long since faded: entire sentences have been blurred by stray smudges of yoghurt and occasional splatters.
Mix together the yoghurt, turmeric, and cumin seeds in a large bowl. Add the mince and stir until combined. Leave on one side for 30 minutes.
Slice 2 of the onions and dice the remaining onions. Heat the oil in a sturdy pan - a cast iron one is perfect. Fry the sliced onions over a gentle heat until golden.
