When fried until crisp, okra takes on a deliciously nutty flavour, and is sharpened with the tang of dried mango powder and red chillies. You can add a sweet-sour note by including freshly grated coconut and a touch of brown sugar to the filling.

Ingredients

  • 500 g (1 lb 2 oz) okra
  • 4 ts

Method

  1. Cut the tops off the okra and make an incision along the length of each one to make a pocket to fill with the spices.
  2. Combine the mango powder, chilli powder, turmeric, and salt. Using a teaspoon, sprinkle ½ tsp of the mixed spices inside the okra. (You will have som
