In India, most homes have a pot of lentils ready to serve at daily meals. This one has a particularly robust, almost nutty quality that marries well with the fried masala.

  1. Put the lentils in a sturdy casserole pan. Pour in 500 ml ( cups) water then add the turmeric and half of the peeled ginger; do not add any salt as it toughens the lentils.
