I’ve been using this recipe for over 30 years - there’s no comparison between home-ground spice mixes and shop-bought ones.

Ingredients

  • 20 g brown cardamom seeds, pods discarded
  • 20 g cinnamon stick, broken into pieces

Method

  1. Tip the spices into a coffee grinder and process until finely ground. Sift the spices and store in a lidded jam jar (the spice mix will keep for about 2 months, or freeze in an airtight plastic box for 6-8 months).
