It was a brave khansamer who first used coriander as a chopped herb in these pancakes. Possibly, he could find no parsley so substituted the closest-looking herb. I can picture the scene at the breakfast table:

THE MEMSAHIB: “I must ask the cook where he bought this parsley. It tastes quite strange.”
