Although there are as many versions of this dish as there are cooks in India, I have chosen this old recipe over those that merely toss precooked rice and lentils together. Be careful of the type of lentils you use as not all of them take the same length of time to cook. Nor, indeed, do all of them arrive at the desired state of readiness at the same time as the rice.
