It is always fun to experiment with a traditional recipe and transpose it to another category and setting. The classic Indian raita which, in fact, acts as a salad in a curry lunch situation and, not so incidentally, cools the palate heated by fiery peppers, moves here into the chilled salad setting. Try serving this dish with cold chicken breasts which you have masked with a creamy curried mayonnaise. A perfect light luncheon for high summer.
