In northern India and Pakistan, the local tomatoes are often pear-shaped and very similar to Italian tomatoes. If you can find fresh Italian tomatoes in your greengrocer, by all means use them. If you cannot, then use ordinary fresh tomatoes. This dish just does not taste as well when made with tinned tomatoes, so please don’t be tempted to take a short cut.
