Of course, these rather unusual croquettes are not only for picnics. They are ideal for a first course at dinner, served hot, or for a light luncheon.

  • 1 lb chicken meat (from breast and thighs), cut into small pieces

Method

  1. Place the chicken in a processor or mortar and process or pound to a paste.
  2. Add the breadcrumbs, onion, coriander, orange, parsley and seasonings and process or pound until the onion is pulverized and everything is well mixed. Then work in the yolk of 1 egg and the white of both, beaten separately into a stiff snow.
