Lassi is the thirst-quenching Indian drink made from yoghurt. The Indians drink it diluted with water, shaken with cracked ice and a little salt. A pinch of spice might be added: sometimes cumin, or it might have a touch of rose-water and sandalwood. Variations include fruit juices mixed with the yoghurt and, since I always loved mangoes, I was very fond of this lassi. It really approximates to a kind of Indian milk shake.
