I know that the official title of these little pancakes is drop scones, and that in England, south of the border, they are known as Scotch pancakes but they were always called Droppies in our family and I can speak of them by no other name.

Ingredients

  • 8 oz/1⅔ cups flour
  • teaspoon salt

Method

  1. Preheat an iron griddle or pan.
  2. Sift the flour, salt, cream of tartar and bicarbonate of soda together into a bowl and then stir in the sugar.
  3. Beat the egg and milk together and then gradually add it to the dry ingredients, beating until you have a thick, bubbly batter.
