These scones do not have to go near an oven, which is probably why our khansamer liked to make them; his kitchen was hot enough without the oven going. Because they don’t contain baking powder or any raising agent, they are heavier than the usual scone, but, served hot with butter, quite delicious. I am reminded of this cosy scene described by Lady Wilson in Simla, in 1906:

We had such a cheery home-coming. The house had been dressed up to look its best, repa
