I have mentioned this sweet spice mix in many of the recipes in this book. Although it can be bought ready-made in Asian foodstores, it is very easy to make one’s own mixture and, as the quantities may be adjusted accordingly, it is far better to make small amounts at a time so that the taste is more pronounced.

Ingredients

  • 2 tablespoons coriander seeds
  • 3-inch stick of cinnamon, broken into small pieces

Method

  1. Mix all the ingredients together and grind or pound them to a fine powder, using an electric spice grinder or a mortar and pestle.
  2. Immediately place in a jar, cap tightly and store in a cool, dark place.
