  • 10 lb tomatoes, blanched and skins removed, chopped
  • 4 large onions, peeled and diced
  • 6 large

Method

  1. Mix the tomatoes, onions, bell peppers, chillies and ginger together in a basin. Purée this mixture in several batches in a food processor or blender, accumulating the purée in a large non-stick pan.
  2. Add all the remaining ingredients and cook, uncovered, simmering over a low heat for about 3 hours or until the purée thickens to the consistency of ketchup. Stir
