These dumplings can be enjoyed on their own as a light meal, or used as a side dish for many main courses – whenever a recipe has a sauce then you can always add a dumpling!

If you have some left over, fry them in a little butter the next day for a light snack.

  1. To make the filling, fry the onion in the lard or white cooking fat. Add the crackling and breadcrumbs, then cook for 5 minutes. Leave to cool.
  2. To make the dumplings, boil the unpeeled potatoes for 15 minutes, or until they are just cooked. (You can do this step a day before and keep them in the refrigerator.) Peel the potatoes and grate them finely (a finer gr
