This was one of my favourite restaurant foods when I was little. It is such a lovely combination of flavours, perfect for a family lunch. The recipe is popular in both countries and is unique to the two countries.
Cook the potatoes in salted boiling water for 15-20 minutes, until tender. Drain. Mash the potatoes with the butter and leave to cool. Stir the yolks into the mashed potato and roll into 2cm/¾in balls. Dip into the beaten egg and cover in breadcrumbs. Set aside. Preheat the oven to 200°C/400°F
