This classic childhood favourite was often served as a light supper when I was little. It is also one of the easiest recipes to make – just remember to keep stirring the semolina while it is cooking.
Put the milk in a pan with the salt and sugar and heat to almost boiling. Add the semolina and stir until it thickens slightly. Cook for 4-5 minutes – the semolina is cooked when you feel it sticking to the base of the pan.
Serve hot, with your choice of topping. For the butter topping, pour over melted butter and sprinkle with icing sugar and cocoa.
