A lacquemant (also spelled lacment, lacquement or lackman and also often called galette) is a crisp, thin yeast waffle that is split when still steaming hot from the waffle iron and smeared with a runny syrup made with honey, kandij syrup or brown sugar and flavoured with a hint of orange flower water.

Served in a pointy paper bag like frites (chips), the warm syrup seeps out of the waffle and into the tip
