Although krakelingen (pretzels) feature prominently in 17th-century Netherlandish art, recipes for them are rare in 16th and 17th-century Dutch cookbooks. They do appear frequently in cookbooks of the 18th century. In a small book entitled ’t Zaamenspraak tusschen een mevrouw, en een banket-bakker en Confiturier from 1758, I found this recipe for salty krakelingen, which I have developed for you. They are made of a short pastry but you cannot exactly say they crack. They remin
