Method

  1. Preheat the oven to 350°F (180°C). Spray two 8-inch (20 cm) cake pans with cooking spray, line with rounds of parchment paper, cut to fit, and spray the paper with cooking spray.
  2. Use an electric mixer at high speed to beat the egg whites in a large bow
