A great variety of dried and waxed meats can be found displayed outside restaurants in Hong Kong and Guangdong during the cold winter months.

These buns stuffed with dried sausages were once very popular, but they are now seldom found on dim sum menus, partly because diners are more health-conscious today. As a young child, I would just eat the sausages and leave the bun on the plate.
