When bitten into, the dumpling gives way to a warm, ginger-flavoured eel filling. The orange peel and salted vegetable help take the edge off the eel’s assertive flavour.

Method

  • Combine all filling ingredients except corn flour. Add seasoning to taste. Mix in corn flour to bind lightly.
  • Prepare har gau dough as instructed.
  • Quickly roll dough into a cylinder and divide into 18 equal pieces. Roll each piece out into a thin, round skin (see Note). Us
