The translucent ‘crystal’ skin (soei zeng pei) of these dumplings allow the rich duck filling to show through, making them a treat for the eyes as well as the taste buds.

Ingredients

Duck meat 400 g, diced or cut into fine strips

Method

  • Mix duck meat with seasoning to taste.
  • Heat some oil and sauté garlic, ginger and spring onions until fragrant. Add duck meat, spinach, bamboo shoot and Chinese celery. Mix well.
  • Add stock and simmer over low heat until meat is cooked and stock is reduced slightly. Add corn flour mixture to thicken sauce lightly.
