Dough

Low-gluten flour (dai garn fun) 600 g
Starter dough 115 g
Baking powder ½ Tbsp
Spring onion (scallion) 1, chopped
Red fermented bean curd (nam yu) ½ tsp
Five spice powder a pinch
Salt 20 g
Water 230 ml
White sesame seeds
Cooking oil for deep-frying

Method

  • Mix dough ingredients together to form a dough. Leave aside for 3 hours to rise.
  • Roll dough out on a floured surface into a sheet 5-mm thick. Take one end of the dough and roll tightly towards the other end as with a Swiss roll.
  • Cut into 12 equal portions. Lightly flatten each piece of dough cut-side up. Sprinkle with sesame seeds.
  • Heat oil and deep-fry until brown and fragrant. Drain well before serving.
