The texture of this classic sweet soup should be floury with coarsely broken beans.


Green beans 150 g, soaked overnight
Rue (chau chou) 10 g
Raw peanuts (groundnuts) 75 g
Sago pearls 30 g
Yellow (step) sugar (peen tong) to taste


  • Drain green beans and discard any skin that has been shed.
  • Combine green beans, rue and peanuts in a clay pot and add enough water to cover them. Simmer over low heat for 2–3 hours until peanuts are soft. Add more water as it evaporates.
  • Add sago pearls 20 minutes before end of cooking time. Stir sugar in 5 minutes before the end of cooking time.
  • Serve hot.
