Plum and Walnut Yeast Crescents

These rogale are one of the many in the family of Polish rolled yeast pastries. You can find rogale filled with nut paste, and you can find them filled with plum butter. One village bakery I visited outside of Poznań, however, did both, and it was, as you might expect, the best of both worlds, so of course that’s what we’re doing here. Substitute the ground walnuts for ground almonds or hazelnuts for a different flavor profile if you like.
