Yeasted baba, or babka, is the brioche Bundt central to every Easter table in Poland. While it’s sometimes molded into the arguably cuter form of a little lamb, the Bundt shape is the most popular. These babas decorate bakery windows, glazed in pastel pinks, blues, and yellows, or dusted with confectioners’ sugar. Here, the cake’s color is deepened to gold with saffron—which also adds a brightening and aromatic touch—and glazed with an orangeflavored icing.
