Makowiec is a poppy seed roll cake that’s an essential part of Polish Christmas but is easily found all year long across Central and Eastern Europe and in many old-fashioned Jewish bakeries around the world. The one unifying principle is the more poppy seed, the better. The most extreme makowiec is the makowiec Lubartowski from the Lubartów region near Lublin, in the far east of Poland.
