Layered Biscuit and Sour Cream Cake

I had to drive clear across Poland to try this cake. Marcinek is a many-layered biscuit and sweetened sour cream cake claimed as a regional delicacy by the town of Hajnówka. Hajnówka is the last stop before you hit the thick Białowieża Forest and the Belarusian border. On my way, I found a room for the night in the culinarily named Knyszyn (Knish) Forest. Over breakfast, the only other guest, an off-road motorcycle enthusiast and IT specialist, told me what he knew about Hajnówka. “It’s the
