Choux Pastry

Choux pastry is ubiquitous in Polish baking, though hardly unique to it. The hot water pastry has its origins in Italian and French baking. While often credited to the sixteenth-century royal court of Catherine de Medici, there’s evidence of this sort of pastry dating back centuries further. Regardless of its start, choux eventually spread to the rest of Europe, including Poland. While choux pastry in its better-known French baking tradition is often used to form perfectionist and almost ri
