Coffee Meringue Triangles

This is, admittedly, a niche pastry. Like Wuzetka, sokoły are Warsaw specialties. Triangular meringues filled with a coffee butter-cream or whipped cream, their name means falcon, a reflection of their vaguely beak-like shape. Make these for a taste of retro Warsaw and a crisp-yet-creamy dessert.
